What's my excuse this time?

The last time I spent a day like this it was because I was getting married and I (along with some wonderful help) was baking the coloured cupcakes that were going to be served as wedding cake.

This morning, I finished off baking a batch of cookies that I started last night but didn't complete as Hunter and I decided to walk to my grandparents' house. Then, after our walk today, while Hunter was napping I started baking a cake (the same kind that we served at our wedding). The plan was that I was going to serve my students cake on Monday morning as inspiration for a descriptive paragraph (2 weeks ago, I brought in a live bearded dragon, thanks Devon, for the same purpose). Well, as I was preparing cake I realized that I wanted to eat some and serving my students cake that has already been eaten from wouldn't be too cool, though I am sure they would understand. So, I decided to bake another batch and make it into cupcakes. So fun! So much baking. It's crazy. How can you tell I'm pregnant, eh? In one day.. cookies, cake and cupcakes. At least it's not all for me. I will share.

By the way, here's the recipe in case you want to get cookin' like me!

Cream Cheese Pound Cake
1 1/2 cup hard margarine, softened
1 - 8 oz pkg cream cheese, softened
3 c. sugar
6 eggs
1 Tbsp vanilla
3 c. cake flour (or 3 cups-6 Tbsp regular flour)
1 envelope of dry whipped topping mix

-Cream together margarine and sugar. Gradually add sugar and continue beating until light and fluffy. Add eggs, one at a time, beating well after each. Blnd in vanilla. Gradually add flour, beating until smooth. Stir in topping mix. Pour into greased and floured 10 inch tube pan. Bake for 1 1/2 hours in 325 degree oven.

Coloured Pound Cake:
Divide batter into 5 or 6 small bowls and add food colouring to each - mix. Pour nito pn, layering colours as desired. Bake as above.

cupcakes look great!! It IS us... Andrew Haak is Colin's cousin... we are also praying hard for Josiah... we went to visit him on Friday - he's such a strong little boy!! Small world...

You always comment on my blog and I have to admit I have never been to yours. Don't be offended as I only religiously check on a handful of bloggers. I love this post. My sister in law is getting married in the fall and she wants to do the same cupcake idea. I love it. I'll have to try your recipe. Thanks for reading my blog.
