Going bananas

My husband is amazing and sacrificing. I just have to share this one...

I store bananas, when they are too soft, by freezing them for banana bread (thanks for the idea, Wynter). I had gathered quite the collection. Yesterday, I pulled them out of the freezer to bake with. By the time I got around to looking at them, it was 11:30pm. At that point, I know it is summer, but there was no way that I was going to begin the process of banana bead preparation. As I was heading off to deal with the young man in my house, who needed some coaxing to go to sleep (he slept until noon yesterday, just to defend myself), I commented to J that I would appreciate it if he could mix up the banana+liquid part of the recipe so that I could deal with it in the morning (I was hoping they would keep better overnight when mixed with sugar, oil and eggs).

Well, I awoke this morning to two dozen banana-chocolate chip muffins and two loaves of banana bread! I love my sweet hubby. When he wakes up, I will ask him how late he stayed up baking for me?!
